Vegan soup is not only good for your health, but it also tastes great. More and more people are discovering the wonders of removing the meat from their soup and enjoying it in the vegan style. Vegan soup is primarily made from vegetables, mushrooms, spices, and tofu. The main advantage to making your own soup as to the store bought one will be in the control yo get over what seasonings and ingredients you use. Vegetables are full of nutrients, so there will be many options for you to decide what to use and what you want to give your body in that particular vegan soup.

A lot of people love to eat beef or chicken in their soup, and where these are sources of protein, there is also protein in beans and tofu can fit the taste of meat to the point you’d never know the difference. It is important to remember that in vegan soup, there is no animal product at all. Because of this, vegan soup is a great way to either cleanse your intestines and also loose weight. You will be eating lots of vegetables, and your body will feel stronger and healthier in the long run.

While there are many kinds of great vegan soup, this one is a personal favorite of mine.

Spiced Red Lentil, Tomato, and Kale Soup
Ingredients:
1 tsp coconut oil
2 large garlic cloves, minced
1 sweet onion, diced
3 celery stalks, diced
1 bay leaf
1 & 1/4 tsp ground cumin
2 tsp chili powder
1/2 tsp ground coriander
1/4-1/2 tsp smoked sweet paprika
1/8th tsp cayenne pepper
14-oz can diced tomatoes
5-6 cups vegetable broth
1 cup red lentils, rinsed and drained
fine grain sea salt and pepper
2 handfuls torn kale leaves or spinach

Directions:
1. In a large pot, sauté the onion and garlic in oil for about 5-6 minutes over medium heat. Add in the celery and sauté for a few minutes more.
2. Stir in the bay leaf and the spices. You can add half the spices and add more later if you prefer.
3. Stir in the can of tomatoes, broth, and lentils. Bring to a boil, reduce heat, and then simmer, uncovered, for about 20-25 minutes, until lentils are tender and fluffy.
4. Stir in kale or spinach and season to taste adding more spices if you wish.

And its really as simple as that. Just remember, when you make vegan soup, you have all the control over what goes into your soup. Feel free to add more ingredients or take some out. As long as you enjoy, then that’s all that matters!
